He began bottling wine under his own name in the early 1950s, including wines made from fruit from vineyards he tended, owned by the Noirot-Camuzet family. Jayer's most famous wines came from the Echézeaux and Richebourg grand cru vineyards, and the premier cru vineyard Cros Parantoux. I've had 4 bottles in the last year, two in Burgundy, one at this tasting and another in California and all of them were different. Even more interesting is that of the two bottles drunk in France, one was the freshest and the other was decidedly tiring. Not surprisingly, the bottle drunk with Jayer himself was the freshest and best and that review is below: Tasted from a Burgundian cellar. Still quite vibrant on the nose with absolutely knock-out aromatic complexity of earth, leather and lot of Vosne spice plus still very fresh, round, rich, full flavors that are like silk on the palate. This is not as vibrant as it once was but it is still a lovely wine with excellent length. The structure in all bottles is now fully resolved and there is no reason to wait any longer though neither is there any rush to drink up. Other bottles have ranged from 91 to 93. Note that from magnum, the wine is fresher still and I liked it slightly better than from 750 ml and it will clearly age longer as well. An absolutely killer nose of stunning complexity, ripeness yet beautiful purity followed by hugely spicy, opulent, dense and rich flavors of real breed and unmistakable class. This is still youthful if no longer young with a finish that is undeniably of grand cru quality and epitomizes power without weight. While this can certainly be approached now with pleasure, it has only just arrived at its apogee and as such, it should hold at this superlative level for years, perhaps even decades. A heady and wonderfully perfumed nose of still largely primary fruit notes leads to quite dense and still completely fresh flavors of simply unbelievable depth and length. All the more remarkable is how fresh and young this remains with only hints of secondary notes to be found and the velvety finish goes on and on. I could taste this the next day and the ethereal nose is simply haunting and it's frankly difficult to really do justice to the sheer breadth of expression. A wine for the ages and one that should live 25 years, something very few '85s can aspire to. Consistent notes save for one recent bottle that didn't seem to possess quite the freshness of the other bottles that I have tried. I've had 4 bottles in the last year, two in Burgundy, one at this tasting and another in California and all of them were different. Even more interesting is that of the two bottles drunk in France, one was the freshest and the other was decidedly tiring. Not surprisingly, the bottle drunk with Jayer himself was the freshest and best and that review is below: Tasted from a Burgundian cellar. Still quite vibrant on the nose with absolutely knock-out aromatic complexity of earth, leather and lot of Vosne spice plus still very fresh, round, rich, full flavors that are like silk on the palate. This is not as vibrant as it once was but it is still a lovely wine with excellent length. The structure in all bottles is now fully resolved and there is no reason to wait any longer though neither is there any rush to drink up. Other bottles have ranged from 91 to 93. Note that from magnum, the wine is fresher still and I liked it slightly better than from 750 ml and it will clearly age longer as well.
