The oldest vines are now from 1985 and our youngest were planted in 1997. Our ten-acre vineyard is planted with Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. PHILIP is a former student of Emile Peynaud at the University of Bordeaux where he earned the Diplôme National d’Oenologie many years ago while working as assistant Régisseur at Château Lascombes. Philip Togni is one of California’s most foresighted winemakers, holding back a small amount of wine and releasing it at age ten. This year, small quantities of the 1995 Cabernet Sauvignon Estate were released, and, as I almost invariably do, I rated it higher than I did initially. It is a classic Cabernet Sauvignon that apparently turns to Bordeaux for elegance, structure, and complexity, yet retains Napa’s extraordinarily sweet, rich, concentrated fruit. This profound 1995 still tastes like an adolescent. For my palate, it will benefit from another 4-5 years of bottle age, and should last easily for another 20-25 years. It is unquestionably one of California’s as well as the world’s greatest Cabernet Sauvignons. As is the practice at this winery, they hold back 50 or so cases of their finest vintages for release after a decade. The current release of their library selection is the 1994 Cabernet Sauvignon, a magnificent effort that, for me, is one of Togni’s six or seven finest wines. Its deep plum\/purple color reveals only a touch of lightening at the edge. A glorious perfume offers up aromas of plums, figs, creme de cassis, smoke, hickory spice, and high quality cigar tobacco. In a blind tasting, this California Cabernet could easily be mistaken for a great Pauillac given its structure, density, richness, and perfume. This 1994 is just beginning to move into its adolescence. Even though it has 20-25 years of life remaining, it is approachable. It is a monumental Cabernet Sauvignon from one of the valley’s legacy producers. The 1997 Cabernet Sauvignon has to be one of the great buys left for profound Napa Cabernet. He's done the aging for you and of course the wine is still an adolescent in terms of aging potential. Brilliant notes of cedar spice box cassis smoke and licorice soar from the glass as if this wine were pretending to be a first-growth Pauillac. Full-bodied powerful still with a boatload of tannin to resolve and just a faint lightening of the dense purple color at the rim this is a brilliant wine from a vintage that produced relatively quick-evolving wines but no such thing is tolerated at Philip Togni. This is a great Cabernet Sauvignon with the exuberance purity and richness of fruit that Napa provides but with a Bordeaux structure that Togni with his Bordeaux upbringing somehow builds into the wine. The 2001 is a re-release from the estate's library. Anticipated maturity: 2012-2027. This is a breathtaking set of wines from Philip, Birgitta and Lisa Togni. Philip Togni hardly needs an introduction to lovers of fine Napa Valley Cabernet Sauvignon. Since his epic 1969 Cabernet Sauvignon at Chappellet, Togni has crafted a series of impeccable, breathtaking wines. It is amazing to consider that Togni's wines remain so reasonably priced when an endless number of new wineries with no track record seem to pop up every day with first releases well over $100 a bottle. The winery is very much a family affair, with Birgitta and, increasingly, Lisa Togni running the show. On an earlier visit this year I tasted the 1987, a wine that remains dazzling for its purity. From time to time Togni releases a small amount of wines from their library, usually at the 10th anniversary of an important vintage. I also tasted the 2008s, sleeper wines from an under-the-radar vintage that will thrill those who have the patience to cellar them. The Cabernet Sauvignon (here referred to as the Main Label) generally includes a dollop of Merlot, Cabernet Franc and Petit Verdot. The estate's Tanbark Hill is a second selection made from the barrels that don't go into the Cabernet Sauvignon. All of the wines see approximately 40% new oak from four different tonneliers. Still very young, with a deeper color than the 2007 with just a touch of lightening at the edge, it reveals notes of forest floor, roasted herbs, black currants, and a hint of mint.
