“While the original disgorgement of this wine is beginning to get a little long in the tooth in regular formats from all but the coolest cellar, the 1990 Dom Pérignon P3 is showing superbly, bursting from the glass with a thrilling bouquet of ripe yellow fruits, dried white flowers, honeycomb, brioche and and spruce smoke. On the palate, the wine is full-bodied, satiny textured and deep at the core, with terrific concentration, ripe acids and structuring dry extract, concluding with a long, beautifully defined finish. The 1990 is clearly a vintage that has been favored by the combination of additional time on the lees and lower dosage, and in its P3 incarnation, it can go head to head with the 1985, even if the latter vintage is aging more gracefully from the original release. Given that the 1990 P3 is an expressive, dramatic wine, there seems little reason to wait, though it ought to perform at this level for the better part of a decade.”
“Silvery gold color, with a very fine mousse. Absolutely stunning aromatics: pungent iodine, oyster shell, oatmeal, toasted wheat and bitter lemon. This smells like top-notch Chevalier-Montrachet from a great vintage. Broad and deep but also very fresh and bright, with suave, toasty citrus and smoke flavors accented by exotic spices. This expands impressively on the back, finishing with great impact, and impression of strong extract, and notes of bacon fat, toffee and minerals.”
Every detail we hold on this bottle, in one place, so you know exactly what is going into your cellar.
Dom Pérignon is vintage champagne only. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon. After at least eight years of elaboration in the cellars, the wine embodies the perfect balance of Dom Pérignon, the Plénitude of harmony.
From 2014, Dom Pérignon abandoned the term Oenothèque to describe its aged, late-release Champagnes. Instead Geoffroy introduced the Plénitude concept, with three releases at different stages of the wine's development.
The final Plénitude Dom Pérignon P3, may occur after approximately 25 years. All the time bands quoted are generalizations, and individual releases may be much older.
