The property in Châteauneuf is made up of eleven separate vineyard parcels spread throughout the Courthézon,La Solitude and Bédarrides sector of the appellation.\u003c\/em\u003e\u003c\/div\u003e\n\u003cbr\u003e\n\u003cdiv style=\"text-align: center;\"\u003e\u003cem\u003e The Châteauneuf  red (a small quantity of white is also produced) is a blend of 75% Grenache, 20% Syrah, with the remaining 5% being made up of Mourvèdre, Counoise and other varieties. The grapes are hand harvested and are then fermented without being de-stemmed. The cuvaison lasts for 12-15 days and the wine is then aged for around 18 months in old oak foudres. No fining or filtration is carried out. The Cuvée Laurence is the same wine as the Cuvée Réservée but is kept in wooden cask for another 18-24 months before being bottled. Boasting a natural alcohol of 16% this wine which was bottled in spring 2003 because its fermentation was extremely slow has virtually everything you could ever want in a profound Chateauneuf du Pape. The color is inky\/ruby\/purple to the rim. The extraordinary nose reveals aromas of kirsch liqueur new saddle leather animal fur Provencal herbs spice box licorice and a salty sea breeze character. On the palate the wine is enormous with an unctuosity thickness and purity that must be tasted to be believed. Over 95% of this offering is old vine Grenache and the rest a field blend of ancient vines. Representing the essence of Chateauneuf du Pape it possesses so much concentration that it is easy to pose the question ... \"where's the tannin?\" Analytically it has very high levels of tannin but the tannin is barely noticeable given the wine's exaggerated wealth of richness and power. This is a modern day legend in the making and despite its precociousness and ease in smelling and consuming it will not hit its prime for another decade. Tipping the scales at 16.1% alcohol it boasts a blockbuster nose of dry vintage port intermixed with pepper herbes de Provence and roasted meats. Frightfully concentrated with layers of glycerin and fruit it should prove to be one of the appellation's greatest classics. More backward than either the 1998 or 2000 Capos it is an enormously endowed hugely concentrated exhilarating effort that will last for three decades or more. It is a strong candidate for the \"wine of the vintage.\" Anticipated maturity: 2010-2035+. When I asked Laurence how she would describe this beauty she said \"It consists of 80% of a great vintage of Chateauneuf du Pape 20% a vintage port and the rest some Syrah and other things we throw in for complexity.\"The 2003 Chateauneuf du Pape Cuvee da Capo is usually a 4000-5000-bottle offering culled from the Cuvee Reservee most of it coming from La Crau. Even though all thirteen authorized varietals are included in the blend it is basically 95% Grenache. At least half of the wine in the cellar was of da Capo level but this cuvee still had some residual sugar to digest (which was a similar issue with the 2000). Patience is unquestionably necessary. Like Henri Bonneau with his famous Reserve des Celestins if you are willing to wait 2-3 years these things usually resolve themselves in favor of the wine. Nevertheless I could see that Laurence was a bit concerned that while this wine has mind-boggling potential she was growing impatient with how slow it was evolving. However I'm thrilled with what I saw as well as the fact that there is so much of it. I'm sure much of what I tasted will end up in the Cuvee Reservee making that wine even better. The wine is simply enormous and already measuring 16.3% natural alcohol. It is gloriously perfumed with a stunning Provencal essence of herbes de Provence ground pepper and a confiture of raspberries cherries and assorted black fruits. In the mouth it is even more massive than the 2000 or 1998. Unbelievably concentrated with huge amounts of glycerin this is a very special potentially monumental effort that hopefully Laurence and her father Paul will have the patience to see through until it finishes fermentation producing a glorious if not quintessential example of old vine Chateauneuf du Pape. It is much more delineated than it was in its fat, grapy, almost overripe youthful state, and now shows extraordinary precision and definition. It is still a massive wine, opaque ruby\/purple to the rim, with notes of camphor, meat juices, roasted herbs, licorice, pepper, and spice. Thick, unctuously textured, but with zesty acidity and sweet tannin, the wine is still very young, and not yet an adolescent. This is one 1998 Chateauneuf du Pape that will age for 30-40 years, and no doubt be prodigious with another decade of cellaring. The debut release of 1998 Cuvee da Capo (made from incredibly low yields of 90% Grenache and 10% the other twelve permitted varietals) is profound. The color is a dense thick-looking ruby\/garnet\/purple. The aromas begin slowly but then roar from the glass like an out-of-control locomotive offering up a smorgasbord of candied black fruits pepper garrigue earth and truffles. Enormously thick and rich but amazingly not heavy this blockbuster full-bodied Chateauneuf du Pape is still youthful but should age gracefully for three decades. The Cuvee da Capo is frightfully expensive by Chateauneuf du Pape standards but if quality like this existed in Burgundy consumers would be willing to pay $500 a bottle. It was actually splendid to drink in its first 5-6 years of life, and then shut down very firmly, and is now just coming out of this dormant period. It is much more delineated than it was in its fat, grapy, almost overripe youthful state, and now shows extraordinary precision and definition. It is still a massive wine, opaque ruby\/purple to the rim, with notes of camphor, meat juices, roasted herbs, licorice, pepper, and spice. Thick, unctuously textured, but with zesty acidity and sweet tannin, the wine is still very young, and not yet an adolescent. This is one 1998 Chateauneuf du Pape that will age for 30-40 years, and no doubt be prodigious with another decade of cellaring. The debut release of 1998 Cuvee da Capo (made from incredibly low yields of 90% Grenache and 10% the other twelve permitted varietals) is profound. The color is a dense thick-looking ruby\/garnet\/purple. The aromas begin slowly but then roar from the glass like an out-of-control locomotive offering up a smorgasbord of candied black fruits pepper garrigue earth and truffles. Enormously thick and rich but amazingly not heavy this blockbuster full-bodied Chateauneuf du Pape is still youthful but should age gracefully for three decades. The Cuvee da Capo is frightfully expensive by Chateauneuf du Pape standards but if quality like this existed in Burgundy consumers would be willing to pay $500 a bottle. The 2007 may come closest in style to the 1998, the debut vintage, although the tannins are sweeter and the wine is perhaps fatter and richer in the mouth. The alcohols in these cuvees can be very high, ranging from 16.1% in 2003, 15.8% in 2000, 16.3% in 1998, to 15.5% (the lowest ever) in 2007. An inky\/purple color is followed by aromas of smoked meats, Peking duck, licorice, lavender, aged beef, grilled steak blood, black currants, plums, sauteed cepes and soy. Enormously concentrated, broad, expansive and massive but not over the top, this is a tour de force in winemaking that is impossible to imagine unless one has a bottle to work through over the course of 4 to 5 hours. Although they advertise using all 13 authorized varietals, this wine is over 90% Grenache, largely from the famed La Crau section of Chateauneuf du Pape. They do have other vineyards from which they pull some of the fruit that goes into the Cuvee da Capo, including St.-Jean, Esquilons and occasionally Monpertuis. The 2007 seems to be broader, fatter, more unctuously textured and more flattering to drink at this stage than the 1998 was. In that sense, the evolutionary development may resemble their 2003s.
