The current property boundaries were heavily influenced by the land purchases of Ferdinand Bouffard in the late 19th Century. Bouffard bought a number of vineyards and châteaux, laying the foundations not just for Pavie but several of its neighboring estates, although he continued to manage them as separate entities. In the early 20th Century, Château Pavie was divided into three: châteaux Pavie Macquin and Pavie Decesse were created from land from the original estate. Pavie remains the largest of the three and is one of the largest estates in Saint-Émilion.

Château Pavie was named a Premier Grand Cru Classé B at the 1954 classification of Saint-Émilion. Gérard Perse bought Pavie in 1998 (having previously bought Pavie Decesse) and implemented significant upgrades to the vineyards and winery. Many of the vines were replanted, and Michel Rolland was hired as consultant winemaker. Subsequent vintages have been markedly different and have created some controversy. The new wines are known for their riper, fuller and more extracted expressions with high alcohol content. They have been well received by American critic Robert Parker but not so favorably by others, notable in the poor review the 2003 received from Jancis Robinson. In the 2012 review of the Saint-Émillion classification, Château Pavie was elevated to the highest status of Premier Grand Cru Classé A.

The vineyards are planted roughly 60 percent to Merlot, 20 percent to Cabernet Franc and 10 percent to Cabernet Sauvignon. Along with the eponymous grand vin, Pavie makes a second wine called Arômes de Pavie, renamed from Tour Simard in 2005. This is made from younger vines with an average age of less than 10 years, compared to 43 for the grand vin. The total production of the estate is roughly 8000 cases annually.

1990 Chateau Pavie Bordeaux

Château Pavie is a Bordeaux estate in Saint-Émilion known for its Merlot-dominant grand vin. I was pleased in this blind tasting to see how strongly both the 1989 and 1990 Pavies performed. Both slightly eclipsed my scores given immediately after bottling. The impressive 1990 Pavie exhibits a deeper more saturated ruby/garnet color as well as a sweeter more expressive bouquet of truffles Asian spices black-cherries and smoked herbs. Full-bodied and powerful with a meaty beef blood-like richness this backward intense deep concentrated muscular St.-Emilion needs 3-4 more years of cellaring it should age well through 2018. People thought his numerous assurances that 2000 was the greatest Pavie ever produced were premature as well as arrogant. However after tasting this extraordinary blend of 60% Merlot 30% Cabernet Franc and 10% Cabernet Sauvignon (made from low yields of 28-30 hectoliters per hectare) six separate times in 2003 it is unquestionably one of the most monumental wines Bordeaux has ever produced. Bottled in March 2003 about nine months later than other 2000s the color is an opaque purple and the bouquet offers up notes of liquid minerals blackberries cherries and cassis intermixed with spice box cedar and white flowers. On the palate it exhibits a massive display of richness and extract yet with pinpoint delineation and vibrancy as well as a 60+ second finish this is the kind of phenomenal wine that Perse's critics were afraid he might produce - a no-compromise immortal wonder that represents the essence of one of Bordeaux's greatest terroirs. Life is too short not to own and consume the 2000 Pavie. Many experts consider this phenomenal terroir to be nearly as great as that of Ausone. Made from a classic blend of 60-70% Merlot, 20-25% Cabernet Franc and the rest Cabernet Sauvignon, this inky/blue/purple-colored blockbuster reveals wonderful notes of blackberries, crushed rocks, roasted meats, spring flowers, cedar, blueberries, graphite and a hint of vanillin. With extravagant fruit and high extract as well as a hint of minerality, this structured, massively intense effort is typical of all the luxurious, perfect or nearly perfect Pavies produced under the Perse regime (which began in 1998). While built for 40-50 years of cellaring, the softness of the vintage and its flamboyant style is slightly less apparent in the 2009 Pavie than in some of the other Perse wines. It boasts an opaque ruby/purple color in addition to gorgeous aromas of crushed minerals, smoke, licorice, cherry liqueur, and black currants. The wine is exceptionally pure and multilayered, with stunning texture and overall balance. The tannin level suggests 3-4 years of cellaring is warranted; it should age gracefully for 25+ years. If readers are wondering why Pavie has become so much better under the administration of Chantal and Gerard Perse, keep in mind that yields are one-third of what they were under the previous owners.

Varietal

Bordeaux Blend

Vintage

2003

Rating

99 RP

Bottle Size

750 ml

Bottle Quantity

1

Country

France

Region

Bordeaux

Location

St Emilion

Producer

Pavie

Color

Red

Wine Type

Table

Robert Parker

99 RP - At its release, the 2003 Pavie was somewhat controversial in wine tasting circles, but eleven years later it is obviously a great classic.

Varietal

Bordeaux Blend

Vintage

2005

Rating

100 RP

Bottle Size

750 ml

Bottle Quantity

1

Country

France

Region

Bordeaux

Location

St Emilion

Producer

Pavie

Color

Red

Wine Type

Table

Robert Parker

100 RP - Gérard Perse believes this is the greatest Pavie he’s made to date, although certainly I would argue that list includes the 2000, as well as the 2009 and 2010, among his superstars. This wine, which I had both in the 2005 horizontal report in the Wine Advocate, and at a mini-vertical with Perse at the restaurant Maison Boulud in Montreal, looks to be a 75- to 100-year wine. Dense, opaque purple to the rim, with a gorgeously promising nose of blackberries, cassis, graphite and cedar wood just beginning to emerge, it tastes more like a three-year-old than wine that is already a decade old. This beauty is intense and full-bodied, with magnificent concentration, a majestic mouthfeel and a total seamless integration of tannin, wood, alcohol, etc. Beautifully rich, full and multidimensional, this is a tour de force in winemaking and certainly one of the top dozen or so 2005 Bordeaux.
