Aunque el Pinot Noir domina la producción, Williams Selyem también elabora una pequeña cantidad de Chardonnay, Zinfandel y un vino de postre fortificado al estilo oporto. Estas ofertas varían en producción de un año a otro, pero muchas también llevan designaciones de viñedo único.
